A tenderized, breaded pork cutlet fried crisp and served on a bun that barely contains it.

Bigger than the bun

Hoosier diners have served this for decades: a pork cutlet pounded thin, breaded, fried, and hung over the edges of a modest bun.

Step by stepInstructions

  1. Pound the cutlets thin with a mallet until about 1/4 inch thick and large.
  2. Set up three dishes: flour; beaten eggs; breadcrumbs mixed with garlic powder, paprika, salt, and pepper.
  3. Dredge each cutlet in flour, dip in egg, then press into the breadcrumbs.
  4. Heat 1/2 inch of oil to 350°F and fry the cutlets 2-3 minutes per side until golden and cooked through. Drain.
  5. Serve on buns with lettuce, tomato, onion, pickles, and mustard — the pork will hang over the bun, as tradition demands.

💡 Chef tips & storage

Pound the pork thin and even so it cooks through in the same time the crust browns. Season the breadcrumbs well — the pork is mild.
