Sweet corn and lima beans simmered together with butter, a simple colonial-era New England side.

Thanksgiving’s oldest side

Native to New England’s earliest tables, succotash is just corn, beans, and plenty of butter — humble, quick, and quietly perfect.

Step by stepInstructions

  1. Melt the butter in a skillet over medium heat and cook the onion until soft, about 3 minutes.
  2. Add the corn and lima beans and cook 6-8 minutes, stirring, until tender and lightly golden.
  3. Stir in the cream, salt, and pepper and cook 2 minutes more.
  4. Finish with the parsley and serve warm.

💡 Chef tips & storage

Fresh corn and shelled limas in season are unbeatable, but frozen work beautifully. A splash of cream makes it company-ready.
