Crispy buffalo chicken wings with celery and blue cheese dip

Buffalo wings were born in 1964 at the Anchor Bar in Buffalo, New York, when Teressa Bellissimo fried up some wings and tossed them in hot sauce and butter. The rest is history: crispy fried wings, a vinegary cayenne sauce, and the mandatory blue cheese and celery on the side.

Step by stepInstructions

  1. Heat the oven to 425°F (220°C). Pat the wings very dry and toss with the baking powder and salt.
  2. Arrange the wings on a wire rack over a baking sheet and bake 45-50 minutes, flipping once, until deeply golden and crispy.
  3. Meanwhile, melt the butter in a small saucepan and whisk in the hot sauce, vinegar, Worcestershire, and garlic powder. Keep warm.
  4. Toss the crispy wings in the sauce until evenly coated.
  5. Serve immediately with blue cheese dressing and celery sticks.

💡 Chef tips & storage

Bake the wings on a wire rack over a sheet pan so the heat circulates and the skin gets extra crisp — no deep fryer needed. Toss them in the sauce right before serving so they stay crunchy.
