  1. Make the brine: dissolve the salt and brown sugar in 6 cups of warm water, then add the ice water. Submerge the turkey breast and refrigerate 8-12 hours.
  2. Rinse and pat the turkey dry. Mix the pepper, garlic powder, and onion powder, and rub the breast with oil and the spice mix.
  3. Set up your smoker at 250°F (120°C) with apple or hickory wood.
  4. Smoke the breast until the internal temperature reaches 160°F (71°C), about 3 hours.
  5. Rest 30 minutes before slicing.
