Chinchulines

Chinchulines are the small intestines of beef, cleaned, seasoned with salt, and grilled over embers until the outside is golden and crackly. They are a beloved part of the achuras course, especially with a squeeze of lemon.

Crisp outside, tender inside

Grilled long and slow, chinchulines turn bronze and shatteringly crisp at the edges while staying pleasantly tender within. Salty, smoky, and tangy with lemon, they are far more delicate than they sound.

Step by stepInstructions

  1. Rinse the intestines thoroughly under cold water, then soak them in cold water with the vinegar for 30 minutes.
  2. Drain, rinse again, and cut the intestines into 6- to 8-inch lengths.
  3. Pat them very dry with paper towels and season generously with the coarse salt.
  4. Grill over medium-low coals, turning every 3 to 4 minutes for 20 to 25 minutes, until the outside is deep golden, blistered, and crisp.
  5. If they char too fast, move them to a cooler spot and continue turning.
  6. Rest for 5 minutes, slice into bite-size pieces, and serve with lemon wedges and chimichurri.

💡 Chef tips & storage

The crisp outside and soft inside are the whole appeal — low and slow is the rule. Chinchulines are best straight off the grill; reheat leftovers briefly in a hot skillet to re-crisp.
