In Argentina, a great cut of beef needs no marinade and no sauce — just coarse salt and a hot fire. Bife de chorizo, with its generous fat cap and buttery texture, is the cut that proves it.

Salt, fire, and faith in the beef

The exterior develops a deep, crackly crust while the inside stays rosy and juicy, and the rendered fat cap adds a hit of pure beefy flavor. Serve it with nothing more than a squeeze of lemon and good bread.

Step by stepInstructions

  1. Season the steaks generously with the coarse salt on both sides and let them sit at room temperature for 30 minutes.
  2. Heat a grill or grill pan until very hot, and oil the grates with the olive oil.
  3. Grill the steaks for 4 to 5 minutes per side for medium-rare, turning once, until charred outside and 135°F in the center.
  4. Stand the steaks on their fat cap for 1 minute at the end so the fat renders and crisps.
  5. Rest the steaks on a board for 8 minutes, then slice against the grain.
  6. Serve with lemon wedges and crusty bread — no sauce required.

💡 Chef tips & storage

A thicker steak cooks more evenly — ask for at least 1 1/2 inches. Leftovers are best the next day sliced cold over a salad or tucked into a sandwich.
