Medialunas

Medialunas — ‘half moons’ — are the croissants of Argentina, smaller and sweeter than their French cousins, with a sticky, glossy glaze. Every bakery stacks them by the tray, and every coffee break features at least one.

They are flaky at the edges and pillowy-soft in the center, with a honeyed glaze that makes them irresistible. One is never enough — that is a proven fact.

Step by stepInstructions

  1. Dissolve the yeast and 1 tablespoon of the sugar in the warm milk and let it foam for 10 minutes.
  2. Mix the flour, remaining sugar, and salt, then add the yeast mixture, eggs, and softened butter; knead for 8 minutes into a smooth, elastic dough.
  3. Cover and let the dough rise in a warm spot for 1 hour, until doubled.
  4. Roll the dough into a large rectangle, fold it into thirds like a letter, and roll it out again to 1/4-inch thick.
  5. Cut long triangles, roll each one up from the wide base, and curve the ends inward into a crescent; place on a parchment-lined sheet.
  6. Let the medialunas proof for 45 minutes, then bake at 375°F for 12 to 15 minutes, until deep golden brown.
  7. While hot, brush generously with the sugar-water-honey glaze and let them cool on a rack.

💡 Chef tips & storage

The glaze is what makes them medialunas rather than croissants — brush it on hot and don't be shy. They are best the day they are made, but keep 2 days in an airtight container and re-crisp briefly in the oven.
