Flan is the dessert of every Argentine family, from birthday dinners to Sunday lunches. This silky baked custard is unmolded to reveal a pool of golden caramel and crowned with a generous spoonful of dulce de leche.

The flan is impossibly smooth and creamy, barely-set and wobbling, with a deep caramel flavor that is balanced by the milky sweetness of dulce de leche on top. Simple, elegant, and nostalgic.

Step by stepInstructions

  1. Preheat the oven to 325°F and have ready a 9-inch round baking dish and a large roasting pan.
  2. Make the caramel: heat the sugar and water in a heavy saucepan over medium heat, swirling occasionally, until it turns deep amber, about 8 minutes; pour it immediately into the baking dish and tilt to coat the bottom.
  3. In a blender, combine the condensed milk, whole milk, eggs, and vanilla, and blend until smooth, about 20 seconds.
  4. Pour the custard through a strainer into the caramel-lined dish and cover with foil.
  5. Set the dish in the roasting pan, add hot water halfway up the sides, and bake for 55 to 65 minutes, until the custard is set around the edges with a slight jiggle in the center.
  6. Cool completely, then chill for at least 4 hours.
  7. Run a knife around the edge, invert onto a platter, and top with the dulce de leche before serving.
