Berlines

Berlines are Chile’s beloved jelly-doughnut cousins, pillowy fried buns filled with manjar and rolled in sugar. Sold at fairs and street stalls all over the country, they’re at their best warm, when the manjar inside is still soft and flowing.

Sugar-crusted, manjar-filled clouds

The outside is crisp and sugary, the inside feather-light and airy, and the manjar filling is thick, sweet, and melting. Warm from the fryer, they’re the definition of a happy treat.

Step by stepInstructions

  1. Dissolve the yeast in the warm milk with a pinch of the sugar and let it stand 10 minutes until foamy.
  2. Mix the flour, remaining sugar, and salt in a large bowl, then add the yeast mixture, eggs, melted butter, and vanilla; knead 8 minutes into a smooth, elastic dough.
  3. Cover and let rise in a warm spot for 1 hour until doubled, then punch down and divide into 8 equal balls.
  4. Place the balls on a floured tray, cover, and let rise 30 minutes more.
  5. Heat the oil to 350°F and fry the berlines in batches for 2 to 3 minutes per side until deep golden; drain on paper towels.
  6. Roll each warm berline in the coating sugar, then inject about 3 tablespoons of manjar into each with a piping tip or a small knife.

💡 Chef tips & storage

Keep the oil at a steady 350°F so the centers cook through without burning the outside. Fill them while still warm so the manjar melts slightly — and eat them the same day, they're best fresh.
