Carato de Guanabana

Carato de guanábana is a classic Venezuelan refreshment made by blending the fragrant pulp of the guanábana (soursop) with water, milk, and sugar. Caratos — cold, blended fruit drinks — are a beloved tradition of the Venezuelan coast, and guanábana is one of the most cherished flavors.

Tropical cream in a tall glass

The drink is thick and creamy with the guanábana’s unique aroma — sweet, slightly tangy, and faintly pine-like. Ice-cold with a dusting of cinnamon, it is the most refreshing thing you can drink on a hot afternoon.

Step by stepInstructions

  1. Remove any seeds and tough fibers from the guanábana pulp.
  2. Blend the pulp with the water, milk, sugar, vanilla, and salt until completely smooth.
  3. Strain through a fine sieve for a silkier drink, if you like.
  4. Chill thoroughly, then pour over ice and dust with cinnamon before serving.

💡 Chef tips & storage

Frozen soursop pulp works beautifully when fresh fruit is unavailable — just thaw it first. The carato is best the day it is made; shake or stir well before serving, as the pulp settles.
