Risgrynsgröt

Risgrynsgröt is Sweden’s comforting rice porridge, simmered slowly in milk until the grains are soft and the pot is thick and creamy. Just a touch of sugar, salt and a cinnamon stick keep it humble and soothing.

It is a Christmas Eve tradition to serve it warm, and a whole almond is hidden in the pot — whoever finds it gets a prize. Leftover porridge often becomes ris à la malta, folded with cream and orange for the next day’s dessert.

Step by stepInstructions

  1. Rinse the rice and combine with the milk and cinnamon stick in a heavy saucepan.
  2. Bring to a gentle simmer, then cook over low heat, stirring often, for 40-50 minutes until the rice is very soft and the porridge is thick and creamy.
  3. Stir in the sugar, salt and butter, adding a splash more milk if it is too thick.
  4. Drop in the almond, if using, and serve warm in bowls.
  5. Top with ground cinnamon and a pat of butter, and let the almond hunt begin.

💡 Chef tips & storage

Stir frequently and keep the heat low so the milk does not scorch. Leftovers turn into the dessert ris à la malta when folded with whipped cream.
