Cod au gratin came to Newfoundland with the French and English settlers of the west coast, who had more salt cod than they knew what to do with and a taste for the creamy dishes of home. The salt fish was soaked, simmered and then baked under a rich white sauce with cheese and crumbs, turning the humblest pantry staple into something that felt like a celebration. It became a staple at parish suppers and family gatherings all along the coast.

What makes it great is that perfect layering — sweet, flaky fish in a silky, sharp cheddar sauce, topped with buttery breadcrumbs that turn golden and crisp in the oven. It’s rich, warming and deeply comforting, the kind of dish that makes you slow down and enjoy it. Serve it with mashed potatoes or a crusty roll to catch every last drop of the sauce.

Step by stepInstructions

  1. Drain the soaked cod, place it in a pot of fresh water and simmer gently for 15 minutes until it flakes, then drain and break it into large chunks.
  2. Melt the butter in a saucepan, whisk in the flour and cook for 2 minutes until golden.
  3. Gradually whisk in the milk and simmer, stirring, until the sauce is thick and smooth.
  4. Stir in most of the cheese, the nutmeg, mustard and pepper, reserving a handful of cheese for the top.
  5. Spread the cod in a buttered baking dish and pour the sauce evenly over it.
  6. Mix the breadcrumbs with the reserved cheese and scatter over the top.
  7. Bake at 375°F for 25 to 30 minutes until the sauce bubbles and the top is golden brown.
  8. Let it rest for 5 minutes, then sprinkle with parsley and serve hot.

💡 Chef tips & storage

If you use salt cod, soak it well — overnight at minimum — or the dish will be too salty to enjoy. Let it rest a few minutes before serving so the sauce sets into perfect, scoopable layers.
