Enyucado

A traditional Panamanian dish — Enyucado is a golden baked cake of grated yuca, coconut and white cheese, at once savory and sweet. It is a beloved Panamanian dessert and snack, perfumed with anise and baked until the top turns crisp and caramelized. Served warm in squares, it tastes like the meeting point of the country’s African, Spanish and indigenous kitchens.

  1. Grate the yuca finely using a box grater or food processor; squeeze out as much liquid as possible.
  2. Combine the grated yuca with the coconut, cheese, butter, eggs, sugar, anise, milk and salt and mix until well blended.
  3. Pour the mixture into a buttered 9-inch baking dish and smooth the top.
  4. Bake at 350°F (175°C) for 45 to 50 minutes, until golden brown and set in the center.
  5. Let cool slightly, cut into squares and serve warm, drizzled with honey if desired.

💡 Chef tips & storage

Squeeze the grated yuca very dry — too much liquid makes the enyucado heavy and gummy. The edges should be deeply golden and slightly caramelized; that is the best part.
