The snap of a good bratwurst — juicy, smoky and gently spiced — is one of the great pleasures of the German grill. These pork sausages, seasoned with marjoram, nutmeg and a whisper of garlic, are a backyard staple from Bavaria to Berlin.

Every region has its own take on the recipe, but the serving ritual stays the same: tucked into a crusty roll with hot mustard and sauerkraut, or piled next to potato salad and pretzels.

Step by stepInstructions

  1. Chill the pork and fat in the freezer for 30 minutes.
  2. Grind the chilled meat and fat through a coarse die into a bowl set over ice.
  3. Add the salt, pepper, marjoram, nutmeg, garlic, onion and ice water, and mix until sticky and well combined.
  4. Fry a small test patty and adjust the seasoning if needed.
  5. Stuff the mixture into the casings and twist into 6-inch links.
  6. Grill the links over medium heat, turning often, 12–15 minutes until cooked through and charred in spots.
  7. Rest 5 minutes, then serve in rolls with mustard and sauerkraut.

💡 Chef tips & storage

Keep everything ice-cold — warm meat makes mushy sausages. Prick the links only if they threaten to burst; the juices are flavor.
