Raclette is the ultimate molten-cheese ritual: a half-wheel of cheese heated until the surface blisters, then scraped in silky waves over boiled potatoes. It is cozy, communal, and completely addictive.

Serve it with gherkins, pearl onions, and pickled vegetables to cut the richness, plus cured ham for good measure. A tabletop raclette grill lets everyone melt their own perfect portion.

Step by stepInstructions

  1. Boil the potatoes in salted water until tender, about 20 minutes; keep them warm.
  2. If using a tabletop grill, heat it and place cheese wedges in the little pans; scrape the melted cheese over the potatoes as each layer blisters.
  3. No grill? Preheat the broiler, place thick slices of cheese on a baking sheet, and broil until molten, about 4–5 minutes, then scrape onto the potatoes.
  4. Serve immediately with the cornichons, pearl onions, pickles, and ham, dusted with paprika, pepper, and chives.

Small potatoes with thin skins are ideal—no peeling needed. Keep the accompaniments cold and tart to balance the rich, molten cheese.
