Currywurst with curry ketchup sauce and french fries

Grilled sausage under a torrent of spiced ketchup and a shower of curry powder — Currywurst is the undisputed king of German street food. It’s messy, it’s fast, and it’s utterly addictive, sold from countless snack stands on every corner.

The magic is the sauce: sweet, tangy and warmly spiced, clinging to every bite of juicy sausage. Serve it the classic way — chopped into coins, doused in sauce, with a fork and a side of fries.

Step by stepInstructions

  1. Heat the oil in a pan and soften the onion and garlic over medium heat, about 5 minutes.
  2. Stir in the ketchup, tomato paste, curry powder, paprika, vinegar, sugar and 1/4 cup water. Simmer 10 minutes until thickened; season with salt and pepper.
  3. Grill or pan-fry the sausages over medium heat, turning often, 10–12 minutes until browned and cooked through.
  4. Slice the sausages into bite-size coins.
  5. Pile the sausage pieces into a shallow bowl or plate.
  6. Pour the hot sauce generously over the top and finish with a dusting of curry powder. Serve with fries or bread.
