Welsh rarebit is the classic Welsh answer to a late supper, served in pubs and homes across the land. Pair it with a pint of beer and a sharp pickle, and eat it while the cheese is still bubbling.

  1. Toast the bread slices and arrange on a parchment-lined baking sheet.
  2. Melt the butter in a saucepan over medium heat; whisk in the flour and cook 1 minute.
  3. Gradually whisk in the milk and ale, then cook, stirring, until thick and bubbling, about 3 minutes.
  4. Off the heat, stir in the cheese, mustard, Worcestershire, paprika, and pepper until melted; beat in the egg yolk.
  5. Spoon the mixture thickly over the toast, right to the edges.
  6. Broil until the topping is golden and blistering, 2-3 minutes, watching closely. Serve at once.
