Soda bread is the daily bread of Irish kitchens, baked on griddles and in ovens across the country and eaten with butter within hours. Serve it warm, split open, slathered with butter and a spoonful of jam.

  1. Heat the oven to 425°F. Whisk the flour, salt, and baking soda in a large bowl.
  2. Make a well in the center and pour in the buttermilk and honey (if using); add the raisins if using. Stir with a wooden spoon until a soft, shaggy dough forms.
  3. Turn onto a floured surface and knead gently 10-15 times until it just holds together — do not overwork.
  4. Shape into a round about 7 inches wide and place on a parchment-lined baking sheet. Cut a deep cross into the top, almost through the loaf, and sprinkle with oats.
  5. Bake until the loaf is deep golden and sounds hollow when tapped, 35-40 minutes.
  6. Cool on a rack at least 20 minutes, then serve warm with butter.
