Belgian waffles come in two great styles: the airy Brussels waffle with deep pockets, and the Liège waffle — dense, buttery, and studded with pearl sugar that caramelizes into crunchy sweet spots. Both deserve maple syrup, cream, or simply nothing at all.

The Liège version, with its pearl-sugar crunch, is the street-food favorite, eaten warm out of hand. The batter is more like a brioche dough; give it time to rise for the best texture.

Step by stepInstructions

  1. Dissolve the yeast in the lukewarm milk; let stand for 5 minutes.
  2. Beat in the eggs, butter, sugar, salt, and vanilla, then stir in the flour to make a thick, sticky batter.
  3. Cover and let rise in a warm spot for 1 hour, until doubled and bubbly.
  4. Fold in the pearl sugar — do not let it melt.
  5. Cook scoops of batter in a hot, buttered waffle iron until deep golden and crisp, about 3–4 minutes.
  6. Serve warm, plain or with cream and berries.

💡 Chef tips & storage

Pearl sugar is the key — regular sugar melts and is lost. If the waffles brown too fast, lower the heat; the sugar should caramelize slowly.
