Poffertjes

Poffertjes are tiny, pillowy Dutch pancakes made with buckwheat, cooked in a special dimpled pan until puffed and golden. They come to the table dusted with powdered sugar and a knob of butter melting on top.

A favorite at Dutch markets, winter fairs, and breakfast tables alike, they are best eaten immediately, still warm from the pan. The classic pan makes flipping them almost too easy — and very addictive.

Step by stepInstructions

  1. Whisk the flours, sugar, and salt; add the milk, egg, yeast, and melted butter and beat until smooth.
  2. Cover and let rest for 30 minutes until the batter is bubbly (skip the rest if using baking powder).
  3. Heat a poffertjes pan (or a large skillet) over medium heat and butter the wells.
  4. Pour about 1 tablespoon of batter into each well; cook until the tops bubble and look set, about 2 minutes.
  5. Flip with a fork or skewer and cook for 1 minute more, until golden.
  6. Pile onto plates, top with a knob of butter, and dust generously with powdered sugar.

💡 Chef tips & storage

If you do not have a poffertjes pan, use a heavy skillet and small spoonfuls. Serve immediately — they deflate as they cool.
