Poffertjes are tiny, pillowy Dutch pancakes made with buckwheat, cooked in a special dimpled pan until puffed and golden. They come to the table dusted with powdered sugar and a knob of butter melting on top.
A favorite at Dutch markets, winter fairs, and breakfast tables alike, they are best eaten immediately, still warm from the pan. The classic pan makes flipping them almost too easy — and very addictive.
