  1. Lay a cutlet flat and top with a slice of ham and a slice of cheese, folding the ham to fit. Fold the cutlet over and secure the edges with toothpicks.
  2. Season the flour with salt and pepper. Dredge each packet in flour, then egg, then breadcrumbs, pressing firmly.
  3. Heat the butter and oil in a large skillet over medium heat. Fry the cutlets 4–5 minutes per side until deep golden and the cheese is melted; lower the heat if browning too fast.
  4. Rest 2 minutes, remove the toothpicks, and serve with lemon wedges, boiled potatoes, and a green salad.
