Jamón ibérico is Spain’s crown jewel of cured meat: deep-red, marbled ham sliced paper-thin so it melts on the tongue. The nutty, sweet flavor comes from acorns eaten by free-ranging Iberian pigs.
It is not cooked, but carved — by hand, with a long knife, moments before serving. Pair it with crusty tomato-rubbed bread and a glass of sherry or Rioja, and you have one of Spain’s greatest pleasures.
