Half-moon pasta pockets stuffed with a fluffy quark, potato, and mint filling, boiled and finished in sizzling browned butter — Carinthia’s most beloved dish.

Carinthia’s crescent of comfort

Kasnudeln come from Austria’s southernmost state, Carinthia, where every family guards its filling recipe — the best ones are famously airy, almost soufflé-like. The fresh mint in the filling is the signature that sets them apart from every other filled pasta.

Step by stepInstructions

  1. Make the dough from the flour, eggs, salt, and water; knead until smooth, wrap, and rest 30 minutes.
  2. Mix all the filling ingredients together and beat until fluffy and light.
  3. Roll the dough thin (about 1/8 inch) and cut into 4-inch rounds or squares.
  4. Place a tablespoon of filling on each piece, fold over into a half-moon, and press the edges firmly to seal.
  5. Bring a large pot of salted water to a gentle boil and cook the kasnudeln in batches 8-10 minutes, until they float and the dough is tender.
  6. Meanwhile, melt the butter in a skillet over medium heat and cook until golden brown and nutty. Toss the drained kasnudeln in the brown butter and serve hot.

💡 Chef tips & storage

The filling should be beaten until fluffy — airy filling is the Carinthian trademark. Seal the edges well with a fork or the pockets will open while cooking.
