Gulaschsuppe fed the armies of the Habsburg Empire — portable, filling, and forgiving of any cut of beef. It’s the soupier cousin of Wiener Gulasch, and Austrians still serve it steaming from huge pots at markets and ski huts, with bread for dunking.
