Djuvec is a one-pot harmony of rice, peppers, tomatoes, and summer vegetables, baked until the grains soak up every drop of flavor. Some versions add meat; all versions disappear fast.

This dish is Balkan comfort food at its most flexible — it welcomes whatever vegetables are in season. Serve it warm, straight from the baking dish, with a simple green salad.

Step by stepInstructions

  1. Preheat the oven to 375°F. In a large ovenproof dish, soften the onion in the oil over medium heat.
  2. Add the garlic, paprika, and tomato paste; cook 1 minute.
  3. Stir in the peppers, tomatoes, zucchini, eggplant, rice, salt, pepper, and 2 cups of water.
  4. Cover tightly and bake for 30 minutes, then uncover and bake 15-20 minutes more, until the rice is tender.
  5. Rest 10 minutes, fluff gently, and serve.

Any combination of seasonal vegetables works, so use what looks best. A cast-iron or ceramic dish holds heat well for even baking.
