Tarator is a chilled yogurt soup with grated cucumber, garlic, and a scatter of walnuts and dill. It is bright, tangy, and wonderfully cooling on hot summer days.

Often served before grilled meats or beside hearty mains, tarator is a Balkan classic that also doubles as a sauce. Thin it with cold water and it becomes a drinkable summer cooler.

Step by stepInstructions

  1. Grate the cucumber, sprinkle with a pinch of salt, and squeeze out the excess water.
  2. Whisk the yogurt with the cold water until pourable.
  3. Stir in the cucumber, garlic, walnuts, dill, oil, lemon juice, and salt.
  4. Chill for at least 1 hour before serving. Stir again, taste, and adjust the salt.

💡 Chef tips & storage

Chill the soup well — it tastes flat if served lukewarm. For a thicker version, reduce the water and serve it as a dip with bread.
