Vinegret Salad

Vinegret is the earthy, wholesome salad of boiled beets, potatoes, carrots, pickles, and sauerkraut, dressed with sunflower oil and a splash of vinegar. Its jewel-toned cubes are a cheerful sight on any table.

Lighter than its mayonnaise-bound relatives, vinegret lets the vegetables speak for themselves. It keeps for days in the fridge and only improves, making it a staple of picnics and weekday lunches.

  1. Toss the beets with 1 tablespoon of the oil so they keep their color.
  2. Combine the potatoes, carrots, pickles, sauerkraut, and onion in a large bowl.
