Pelmeni

Pelmeni are Siberian dumplings — tender pockets of dough wrapped around a juicy, seasoned meat filling. Boiled until they bob to the surface and glossed with butter, they are a whole meal in a bowl.

Making pelmeni is a communal ritual: families gather around the table and shape dozens at once, freezing most for later. Serve them with sour cream, a splash of vinegar, or a grinding of black pepper, and plenty of melted butter.

Step by stepInstructions

  1. Mix the flour, eggs, water, and salt into a firm dough; knead for 5 minutes, cover, and rest for 30 minutes.
  2. Combine the meats, onion, garlic, pepper, and salt into a smooth filling.
  3. Roll the dough thin, cut into 2-inch rounds, and place a teaspoon of filling in each; fold and pinch the edges firmly, then bring the two corners together.
  4. Boil in salted water in batches until they float, then cook 2-3 minutes more.
  5. Toss with melted butter and serve hot with sour cream.

💡 Chef tips & storage

Seal the edges tightly so no broth escapes. Freeze uncooked pelmeni in a single layer on a tray, then bag them — they cook straight from the freezer, just add a minute or two.
