Kvass Braised Meat

Meat braised in kvass is a revelation — the fermented rye drink lends a gentle sourness and a deep, malty sweetness that transforms humble beef into something remarkable. It is old-fashioned cooking that deserves a revival.

Simmered low and slow with onions and carrots, the meat turns fork-tender and the sauce becomes glossy and complex. Serve it with buckwheat kasha or boiled potatoes to soak up every drop.

Step by stepInstructions

  1. Season the beef and brown it well in oil in a Dutch oven; transfer to a plate.
  2. Add the onions and carrots to the pot and cook until softened, about 5 minutes; stir in the tomato paste and flour.
  3. Pour in the kvass, scraping up the browned bits, and return the beef with the bay leaves and peppercorns.
  4. Cover and braise at a gentle simmer until the meat is very tender, about 2 hours, adding broth if the liquid runs low.
  5. Stir in the garlic, season to taste, and serve over kasha or potatoes.

💡 Chef tips & storage

Use traditional rye kvass, not flavored commercial sodas — its natural sourness is the point. Taste before salting, as kvass brings its own saltiness.
