This is that loaf: a simple white bread with a golden, tender crust and a soft, pillowy crumb. It takes time — the rising cannot be rushed — but the reward is a warm loaf that fills the whole house with its smell.   1. In a large bowl, mix the warm water, warm milk, and honey, then sprinkle the yeast over top and let it sit for 5 minutes until foamy.
  2. Add the flour, softened butter, and salt, and stir until a shaggy dough forms.
  3. Turn the dough onto a floured surface and knead for 8 to 10 minutes, until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm spot for 1 to 1 1/2 hours, until doubled in size.
  5. Punch the dough down, shape it into a loaf, and place it in a greased 9-by-5-inch loaf pan.
  6. Cover and let it rise again for 45 to 60 minutes, until it domes above the pan.
  7. Bake at 375°F for 30 to 35 minutes, until deep golden brown and hollow-sounding when tapped on the bottom.
  8. Brush the hot loaf with melted butter and cool on a wire rack before slicing.

A warm, draft-free spot is the secret to a good rise — the top of the fridge works well. The loaf is done when it sounds hollow when tapped on the bottom. Store it in a cloth bag or bread box and toast any slices left after day one.
