One pot to start the day

The bananas cook down into soft, starchy pillows that soak up the savory beef sauce, making each spoonful rich and comforting. Onion, tomato, garlic, and ginger build a gravy that binds it all together, with an optional spoonful of peanut butter adding depth. It is hearty without being heavy, the rare breakfast that feels like a proper meal. Serve it in deep bowls with extra sauce, and start the day properly.

Step by stepInstructions

  1. Heat the oil in a heavy pot and brown the beef, about 6 minutes. Set aside.
  2. Cook the onion in the same pot until golden, about 5 minutes.
  3. Add the garlic, ginger, and tomatoes, and cook until the tomatoes soften, about 4 minutes.
  4. Return the beef to the pot with the broth, salt, and pepper, and simmer, covered, until the beef is tender, about 30 minutes.
  5. Add the bananas and the peanut butter if using, nestling the bananas into the sauce.
  6. Cover and simmer gently until the bananas are soft, about 15 minutes.
  7. Mash a few bananas lightly into the sauce to thicken it.
  8. Serve hot in bowls with plenty of gravy.
