Mhadjeb is the flatbread of Algerian breakfasts and market stalls — a soft semolina dough rolled whisper-thin and folded around a slow-cooked tomato and onion filling. Home cooks make stacks of them for the family, cooking each one on a hot griddle until it blisters. The recipe looks simple, but the details — resting the dough, rolling it thin, cooking it hot — are what make the difference.

The bread is crisp and crackly where it hits the griddle, yet tender enough to tear, and the filling is jammy, lightly spicy, and faintly sweet from the long-cooked onions. Rolled, folded, and sealed by hand, every square is a pocket of pure comfort. Serve them warm with mint tea, a drizzle of olive oil, or a smear of harissa for heat. They also make a fine packed lunch or a simple dinner with a salad alongside, and they reheat surprisingly well in a dry skillet.

  1. Make the filling: heat 2 tablespoons of the oil in a skillet and cook the onion until soft, about 8 minutes. Add the tomatoes, tomato paste, paprika, cayenne, and a pinch of salt and simmer 15 minutes until thick. Stir in the cilantro and cool completely.
  2. Make the dough: mix the semolina and salt in a bowl. Add the warm water and the remaining oil and knead 8 to 10 minutes until smooth and soft. Cover and rest 30 minutes.
  3. Divide the dough into 6 balls and keep them covered. Oil your hands and the work surface, then press each ball into a very thin round, about 10 inches across.
  4. Spoon 2 tablespoons of filling into the center of each round, fold the edges over into a square envelope, and press gently to seal.
  5. Cook on a hot dry griddle or cast-iron skillet for 3 to 4 minutes per side, until golden with dark spots.
  6. Stack the finished mhadjeb under a clean towel to keep them soft, and serve warm.

The dough must rest — it relaxes and rolls much thinner afterward. A dry, very hot griddle gives the signature blistering.
