Tongan Roast Pig (Puaka Tunu)

Puaka tunu is the showstopper of Tongan feasts. Traditionally a whole pig is roasted in an umu, an earth oven lined with heated volcanic stones, for hours until the skin crackles and the meat is fall-apart tender. Modern home cooks recreate the magic with a pork shoulder or leg, marinated overnight in soy, garlic, and citrus and roasted slowly until deeply golden. No Tongan milestone — a wedding, a funeral, a first birthday, a church opening — is complete without it.

What makes it great: crackling-crisp skin, smoky-sweet marinated meat, and juices that pool in the pan and beg for a piece of taro. It feeds a crowd, it brings people to the table, and it fills the whole neighborhood with a smell that means celebration. Serve it with boiled root vegetables and a bowl of coconut dipping sauce.

Step by stepInstructions

  1. Score the pork skin in a diamond pattern with a sharp knife, cutting just into the fat.
  2. Mix the soy sauce, oil, garlic, salt, pepper, brown sugar, lime juice, and thyme into a paste and rub it all over the pork, massaging it into the score marks.
  3. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.
  4. Preheat the oven to 325°F and place the pork on a rack in a roasting pan, skin side up.
  5. Roast for 3 1/2 to 4 hours, basting every 45 minutes, until the internal temperature reaches 195°F and the skin is deeply golden and crisp.
  6. Rest for 20 minutes before carving; serve with boiled taro, yam, and a bowl of coconut dipping sauce.

💡 Chef tips & storage

For extra-crisp skin, pat the skin completely dry before roasting and rub it with a little extra salt. Let the meat rest before carving so the juices stay in the meat.
