Speculoos

Speculoos is Belgium’s answer to the spiced cookie: thin, brittle, and caramel-toned from dark brown sugar, with a warm blanket of cinnamon and spice. It is made for dunking in coffee.

Belgian cafés and bakeries have perfected this crisp cookie, and it has become famous worldwide in spreadable form. Bake until deep golden at the edges for the fullest caramel flavor.

Step by stepInstructions

  1. Cream the butter and brown sugar until light, then beat in the egg yolk and vanilla.
  2. Stir in the flour, spices, salt, and baking soda until a soft dough forms; add milk by spoonfuls if too dry.
  3. Shape into a log, wrap, and chill for at least 1 hour.
  4. Slice 1/4 inch (6 mm) thick and arrange on parchment-lined trays.
  5. Bake at 350°F (175°C) for 12 minutes until deep golden at the edges.
  6. Cool completely — they crisp up as they cool. Store in an airtight tin.

💡 Chef tips & storage

Dark brown sugar gives the caramel depth. Bake until the edges darken; underbaked speculoos turn chewy instead of crisp.
