Puaka tunu is the showstopper of Tongan feasts. Traditionally a whole pig is roasted in an umu, an earth oven lined with heated volcanic stones, for hours until the skin crackles and the meat is fall-apart tender. Modern home cooks recreate the magic with a pork shoulder or leg, marinated overnight in soy, garlic, and citrus and roasted slowly until deeply golden. No Tongan milestone — a wedding, a funeral, a first birthday, a church opening — is complete without it.
What makes it great: crackling-crisp skin, smoky-sweet marinated meat, and juices that pool in the pan and beg for a piece of taro. It feeds a crowd, it brings people to the table, and it fills the whole neighborhood with a smell that means celebration. Serve it with boiled root vegetables and a bowl of coconut dipping sauce.
