Tongan Lamb Curry (Sipi Kari)

Curry arrived in Tonga with traders and laborers in the late 1800s, and the islands wasted no time making it their own. Tongan cooks swapped heavy dairy for coconut cream and added local lamb, potatoes, and carrots, creating a milder, sweeter curry that suits the island palate. Today it is a staple at family lunches, church gatherings, and fundraisers, served in big pots over mountains of rice.

What makes it great: the coconut milk turns the lamb buttery and tames the spice into something warm rather than fiery, while the potatoes soak up every drop of golden sauce. It is comforting, generous, and endlessly flexible — and like all good curries, it tastes even better the next day once the flavors settle.

Curious how this curry compares to others? Our World of Curries guide explains 8 styles.

Step by stepInstructions

  1. Heat the oil in a large pot over medium-high heat and brown the lamb cubes in batches until golden, about 6-8 minutes per batch.
  2. Add the onion, garlic, and ginger and cook until soft, about 4 minutes.
  3. Stir in the curry powder and cook for 1 minute until fragrant.
  4. Pour in the coconut milk and water, add the salt, and bring to a gentle simmer.
  5. Cover and cook for 1 hour, then add the potatoes and carrots and simmer uncovered for 30-40 minutes more, until the lamb is tender and the sauce has thickened.
  6. Taste and adjust the salt, then serve hot over steamed rice.

💡 Chef tips & storage

Tongan curries are milder than Indian ones — start with 2 tablespoons of curry powder and add more if you like heat. The curry tastes even better the next day once the flavors settle.
