Palačinke are thin, tender crepes that the Balkans have perfected — delicate at the edges, slightly golden, and ready for any filling you can dream up.

They are rolled around jam, chocolate-hazelnut spread, ground walnuts, or soft cheese, dusted with sugar, and eaten with a fork and a smile. A favorite of children and adults alike, they turn any meal into a small celebration.

  1. Whisk the flour, eggs, milk, water, oil, salt, and sugar into a smooth, thin batter; rest 15 minutes.
  2. Heat a lightly buttered 10-inch skillet over medium heat.
  3. Ladle in a small scoop of batter, tilting to coat the bottom; cook 1-2 minutes until the edges lift.
  4. Flip and cook 30 seconds more; slide onto a plate. Repeat with the remaining batter.
  5. Fill each crepe with jam or spread, roll up, dust with powdered sugar, and serve.

💡 Chef tips & storage

Resting the batter for 15 minutes gives the tenderest crepes. The first crepe is always a test — don't worry if it doesn't come out perfect.
