Fårikål

Fårikål — literally “lamb in cabbage” — is Norway’s beloved national dish and the taste of autumn there. Thick wedges of cabbage and chunks of lamb simmer together with whole black peppercorns until the meat is falling-apart tender and the broth turns rich and sweet.

It is a simple, honest one-pot meal, traditionally eaten from September through the first frosts and often served with boiled potatoes. Fårikål is the centerpiece of many a casual family feast, and leftovers taste even better the next day.

Step by stepInstructions

  1. Layer the cabbage wedges and lamb chunks in a large pot, seasoning each layer with peppercorns and salt.
  2. Pour in the water, cover, and bring to a gentle simmer over medium heat.
  3. Reduce the heat to low and simmer, covered, for 1 1/2 to 2 hours, until the lamb is very tender and the cabbage is meltingly soft; stir once or twice.
  4. Thicken the broth slightly with the flour slurry and simmer 5 minutes more.
  5. Season to taste and serve steaming hot with boiled potatoes.

💡 Chef tips & storage

Do not stir too often — the layers should hold their shape. Whole peppercorns are essential; ground pepper just is not the same.
