Panikeke are Tonga’s beloved fried pancakes, sold warm in paper bags at markets and bus stations from early morning. The dough is made with flour, coconut milk, and a little sugar, then fried in deep oil until puffy and golden. They are eaten for breakfast with tea, or any time of day as a snack, and the smell of them frying is enough to stop traffic.
What makes it great: crisp and golden on the outside, airy and tender within, with just a whisper of sweetness. They are simple, cheap, and utterly addictive — the kind of breakfast that makes you plan a second batch before the first is gone.
