Okayu, Japan’s rice porridge, has been a source of comfort for more than a thousand years, traditionally given to the sick, the elderly, and anyone in need of something gentle. Rice is simmered slowly in plenty of water until it breaks down into a silky, soothing porridge that is easy to eat and easy to digest. Served with pickled plums, scallions, and a few simple toppings, it is breakfast, sick-day food, and quiet comfort all at once.
