Talautu (Fish in Coconut Milk)

Talautu is the classic fish dish of Papua New Guinea’s coastal villages, where the day’s catch is simmered gently in coconut cream and served with sago or taro. It is a dish of pure economy and generosity: a little fish, a few limes, and the coconut palms that shade every beach become a meal that feeds a family.

What makes talautu great is its soothing simplicity. The coconut milk turns silky and sweet, the fish stays moist and flaky, and the lime and chili keep everything bright. Serve it in deep bowls over steamed rice and it is exactly the kind of food you want on a rainy evening.

Step by stepInstructions

  1. In a large pot, warm 1/2 cup of the coconut milk over medium heat until it starts to bubble.
  2. Add the onion, garlic, ginger, and chili and cook, stirring, until fragrant, about 3 minutes.
  3. Pour in the remaining coconut milk and coconut cream and bring to a gentle simmer.
  4. Season the fish with salt, then slide it into the pot and simmer gently until just cooked through, 6-8 minutes.
  5. Stir in the lime juice, taste, and adjust the salt. Serve hot over rice, scattered with herbs.

💡 Chef tips & storage

Use a firm, mild white fish so the chunks hold together as they simmer. For an extra-rich finish, stir in a spoonful of thick coconut cream just before serving.
