Puff puff is the sweet fried dough ball that West Africans grew up on, known as togbei in Ghana, bofrot in some corners, and mikate in Cameroon, but loved everywhere. It turns up at every celebration, school break, and street corner, sold warm in paper cones and shared by the handful. The recipe is simple — flour, yeast, sugar, and nutmeg — but the memory it makes is anything but. It is the first thing many children learn to make and the first thing guests are offered.

Golden pillows with a soft, airy heart

The outside is crisp and lightly golden, giving way to a cloud-soft, airy center that pulls apart like cotton. A whisper of nutmeg warms every bite, and the sugar coating adds just enough sweetness to make it impossible to eat one. Serve puff puff warm, dusted with sugar, with tea or on its own — they disappear fast either way, best shared straight from the frying basket while everyone grabs at once.

Step by stepInstructions

  1. Whisk the flour, 1/4 cup sugar, yeast, salt, and nutmeg together in a large bowl.
  2. Add the warm water and vanilla and stir until a soft, sticky dough forms. Cover with a kitchen towel.
  3. Let the dough rise in a warm spot until doubled, about 45 minutes to 1 hour.
  4. Heat the oil in a deep pot to 350 F.
  5. Wet your hand, scoop a small amount of dough, and drop it into the oil. Repeat, frying in batches of five or six so the balls have room.
  6. Fry for 2 to 3 minutes per side, turning, until puffed and deep golden all over. Drain on paper towels.
  7. Roll the warm puff puff in sugar and serve the same day, warm or at room temperature.

💡 Chef tips & storage

Let the dough rise until doubled or the puff puff will be dense. Drop the batter in quick, even spoonfuls and don't crowd the pan.
