Fonio is one of West Africa’s oldest grains, grown in the dry lands of Senegal and Mali for thousands of years and prized for its speed — it cooks in about five minutes. This simple pilaf, simmered with tomato, onion, and stock, is how it appears on everyday tables. It is the quick side dish that feels special without asking for much, so quick that in Senegal they joke it cooks before the water boils away, though five minutes is the honest number.

The grains are tiny, like fine couscous, and turn fluffy and separate with a mild, nutty sweetness and a hint of earthiness. Toasted briefly in oil before simmering, they pick up an even deeper flavor, and the tomato and onion keep it savory and bright.   1. Rinse the fonio in a fine-mesh strainer and drain well.
  2. Heat the oil in a saucepan over medium heat. Add the onion and cook until soft, about 4 minutes.
  3. Add the garlic, tomato, and scotch bonnet and cook for 2 minutes.
  4. Stir in the fonio and toast for 2 minutes, stirring, until it smells nutty.
  5. Pour in the stock, add the salt, and bring to a boil. Cover, reduce the heat to low, and cook for 5 minutes, until the liquid is absorbed.
  6. Fluff with a fork, scatter with parsley, and serve warm.
