Pad prik king puts prik king curry paste, made from dried chilies and galangal, to work with no coconut milk in sight. It is a dish from central Thailand that shows up at family dinners and temple festivals alike, most often made with green beans and whatever protein is on hand. Because the paste carries all the flavor, it is one of the quickest Thai dishes to pull together.

The green beans stay snappy and sweet, coated in a concentrated curry sauce that is salty, slightly sweet, and warmly spicy. Ground pork soaks up the paste, and slivered kaffir lime leaves add a citrusy fragrance that lifts the whole plate. A bowl of jasmine rice turns it into a satisfying meal, and it is just as good made with chicken, shrimp, or tofu. Step by stepInstructions

  1. Heat the oil in a wok over medium-high heat. Add the garlic and prik king paste and fry for 1 to 2 minutes, until fragrant and the oil turns red.
  2. Add the ground pork and stir-fry, breaking it up, until cooked through, about 4 minutes.
  3. Add the green beans and toss to coat in the paste, then add the stock and cover. Steam for 3 minutes, until the beans are crisp-tender.
  4. Uncover and stir in the fish sauce and palm sugar, cooking 1 minute more until the sauce clings to everything.
  5. Stir in the kaffir lime leaves, then serve hot with jasmine rice.

💡 Chef tips & storage

Blanch the green beans for a minute first if you like them softer, or keep them raw for maximum snap. Prik king paste is sold at Asian markets; red curry paste with a pinch of extra chilies is an acceptable stand-in.
