Dak Galbi (spicy stir-fried chicken) with sweet potato and cabbage

Dak galbi was born in Chuncheon, a city in the mountainous Gangwon province, where it became the local specialty in the 1960s and grew into a national obsession. Chicken, cabbage, sweet potato, and rice cakes are stir-fried at the table in a fierce gochujang sauce. It is loud, communal, and always cooked in a big sizzling pan. When the chicken is gone, the classic move is to stir-fry rice in the leftover sauce, so do not fill up completely.

The chicken is tender and coated in a sticky, sweet-spicy glaze, while the cabbage softens and the sweet potato turns creamy in the sauce. The rice cakes soak up the flavor until they are impossibly chewy and good. Serve it straight from the pan over rice, and let everyone take what they want.   1. Whisk the gochujang, gochugaru, soy sauce, honey, garlic, and ginger into a thick sauce.
  2. Toss the chicken with the sauce and let it marinate while you prep the vegetables.
  3. Heat a large skillet or wok over high heat and add the chicken with all of its marinade.
  4. Stir-fry for 5 minutes, until the chicken is nearly cooked through.
  5. Add the sweet potato, cabbage, and onion and stir-fry for 10 minutes, until the vegetables soften and the sauce clings to everything.
  6. Add the scallions and sesame oil and cook 2 minutes more.
  7. Sprinkle with sesame seeds and serve hot with steamed rice.

💡 Chef tips & storage

Toss the chicken in the sauce first and let it sit while you prep the vegetables so the flavor goes deep. If you like it milder, cut the gochugaru in half.
