Samgyeopsal means three-layer flesh, a nod to the alternating layers of fat and meat in pork belly, and it is the most social meal in Korea. Thick slices are grilled at the table until golden, then cut into pieces and wrapped in lettuce with garlic and ssamjang. It has been a national favorite since the 1970s, when tabletop grilling became the great Korean pastime. The cooking and eating happen together, which is the whole point.

The belly turns golden and crisp at the edges while staying juicy within, its rich flavor cut by the fresh lettuce and pungent garlic.   3. Grill the pork for 3 to 4 minutes per side, until golden brown and crisp at the edges.
  4. Cut the slices into bite-size pieces with kitchen scissors or a knife.
  5. Serve the pork with lettuce, perilla leaves, garlic, and ssamjang.
  6. Let everyone build their own wraps, dipping in sesame oil and sprinkling with gochugaru and scallions as they like.

Pat the pork belly dry before grilling so it sears instead of steaming. A cast-iron skillet or grill pan works beautifully if you do not have a tabletop grill.
