Murtabak is the stuffed cousin of roti canai, a street-stall staple across Malaysia where the dough is stretched paper-thin and folded around a spiced filling. It is cooked on a hot griddle until the shell is golden and shattering, then chopped into pieces and eaten with curry sauce, and ordering one is theater in itself: you watch the dough slapped and stretched on the griddle before it disappears around the filling. The filling is usually minced meat and egg, and the whole thing is a knife-and-fork-free event.

The shell is crisp and buttery, the filling savory and a little spicy, and the egg binds everything into one rich, satisfying pocket. It is heavier than roti canai, more of a full meal than a snack, which is why it is so popular for breakfast and late nights alike, and the classic dipping sauce is a thin curry, though some stalls offer pickled onions and chili sauce instead, and both are correct. Step by stepInstructions

  1. Knead the flour, salt, ghee, and water into a soft dough. Coat with oil and rest 30 minutes.
  2. Brown the beef with the onion and garlic in a skillet, 6 to 8 minutes.
  3. Stir in the cumin, coriander, curry powder, and turmeric, season with salt, and cook 2 minutes. Cool slightly, then stir in the eggs.
  4. Divide the dough into 6 pieces, and stretch each piece very thin on an oiled surface.
  5. Place a scoop of filling in the center, then fold the four sides over it like an envelope.
  6. Heat 2 tbsp of the oil in a skillet over medium heat.
  7. Cook each murtabak until golden brown and crisp, 4 to 5 minutes per side, pressing gently.
  8. Cut into wedges and serve with curry sauce or pickled onions.

💡 Chef tips & storage

Resting the dough is non-negotiable for a stretchy, elastic murtabak. If the pan gets too hot, lower the heat so the filling cooks through before the shell burns.
