Done right, ful is creamy and earthy, with the garlic and cumin sharpened by lemon and finished with a generous pour of olive oil. Step by stepInstructions

  1. Soak the fava beans overnight in plenty of water with the baking soda.
  2. Drain and rinse the beans, then put them in a large pot with fresh water to cover by 2 inches. Simmer, skimming any foam, until the beans are very tender and falling apart, 1 1/2 to 2 hours.
  3. Mash about a third of the beans against the side of the pot to thicken the liquid, then season with the garlic, cumin, salt, and pepper.
  4. Simmer for another 10 minutes, adding a little water if the ful looks dry.
  5. Ladle the ful into shallow bowls and top each with olive oil and a squeeze of lemon.
  6. Pass the tomatoes, onion, parsley, and eggs at the table, and serve with warm bread for scooping.

Canned cooked fava beans cut the cooking time to 15 minutes with almost no loss. Mash a third of the beans into the sauce — that creamy texture is the whole point.
