Adas polo, lentil rice, is a beloved Persian comfort plate that manages to be both humble and special. Brown lentils are simmered and layered through fluffy basmati rice, then topped with sweet dates, raisins, and golden fried onions. A little cinnamon and turmeric perfume the whole pot, and it is often served with plain yogurt or a simple salad. Like many Persian rice dishes, it relies on parboiling and steaming, and the reward is a pot with a crisp, golden bottom that guests will fight over.

Step by stepInstructions

  1. Rinse and soak the rice in salted water for 30 minutes.
  2. Simmer the lentils in 3 cups of water until just tender, 15 to 20 minutes. Drain, saving the cooking water.
  3. Fry the onion in 2 tablespoons of the oil until deep golden; add the beef, turmeric, and salt and cook until browned. Stir in the dates and raisins and cook 3 minutes.
  4. Parboil the rice in boiling salted water for 6 minutes and drain.
  5. In a heavy pot, layer half the rice, then the lentil-beef mixture, then the remaining rice, mounding it. Drizzle with the butter and 3 tablespoons of water.
  6. Cover with a towel-wrapped lid and steam over low heat for 40 minutes.
  7. Gently toss the rice and lentils together, scatter with cinnamon, and serve warm.

💡 Chef tips & storage

Taste a date before adding — very sweet ones need less sugar in the onion topping. If you like, swap half the ground beef for extra lentils to make the pot go further.
